If you are using tap water then definitely taste would differ. Next is the quality of the beans. Almost all espresso coffee makers use fresh beans in their espresso machines for preparing the coffee. If you have the habit of buying beans in large quantity and storing them, leave the habit at once. Beans that are old will not yield you the same taste as that of fresh beans.
Last but not the least is the grinder quality. If the grinder in your espresso machine is not working properly, you may go in for a separate grinder. You can grind your beans in this grinder and can then use it in your espresso machine.
